Meal Planning and Prepping
So in my first post I stressed the importance I have found in meal planning. If I don't plan, I flounder. I stuck to about 5 of the 7 meal planned days last week and was able to use leftovers as a buffer when I didn't feel like cooking so it all works out. I consider that a win for meal planning. I use up what's made keto in the fridge and I end up not having to toss a bunch of food that went bad. $$$ saved...good job. So when I get to set aside time to meal prep for the week, I feel even more accomplished. I'm using the items I have on hand or bought for a specific purpose, again, avoiding the waste of things and staying on track. But then, I head to the store for like 1 or 2 things, and I end up coming home with 1 or 2 bags of food. Some things are staples to restock or last minute 'oh I forgot I needed that'. But most items are extras or unplanned meal items I probably need to start being a bit more discerning about and passing up for another day. I absolutely hate to waste food. I get so disappointed when veggies and fruits end up going bad because I forgot about them or they were just looked over.
Now that I'm working from home again and have a much more flexible schedule, I need to sharpen my planning and prepping schedules. So tonight, I got a batch of our favorite fat bombs made...cookie dough fat bombs.

Tomorrow, I need to get egg bites for breakfast prepped and make savory keto bread as well as some flatbreads for tomorrow night's dinner plans...greek meatballs with tzatziki sauce. My awesome bf Joe had a small magnetic white board that we can put on the front of the microwave in the kitchen. It has become my menu planning board. I work out what we have on hand, what we would like to try from my Pinterest hunting for new keto recipes or some of our favorites and plan the week out as best I can. Meal planning and prepping is a valuable weekly task for us just as important as making good choices for us to stay on track with our keto way of living.
Find the way that works for you and make it happen. I see so many people on the Facebook keto boards scared to start, worried about failing, etc. I do reply and give encouragement and snippets of wisdom and experience. Most of us don't plan to fail, we fail to plan. Keep sharing your victories on the scale, in the kitchen and about life in general. Share the negativity you sometimes may receive and listen to those who share hope and positive vibes. Do what is right for you and no one else. You just do you!!
