Food...glorious food

Ok so I've faced and accepted it, I didn't put this weight on overnight, it's not going to come off overnight.  It's a process, it's a marathon not a sprint.  I just need to continue to make good choices every day, every meal, every moment.  And if I'm going to 'diet', I'm going to eat food full of flavor. 
Breakfast prepared for this week...a knockoff of the Sous Vide bites from Starbucks.  I love those tasty bites from Starbucks but I found out that they have loads of rice starch in them.  I found this recipe on Pinterest for the Bacon Gruyere Egg bites.  I used the gruyere the week before in the Chicken Cordon Bleu Casserole I made so I used sharp white cheddar in these instead.  Now I've made egg muffin bites before but these were so much better.  The tricks...sour cream and baking them in a bain marie, a French cooking method meaning to use a water bath while baking.  We do this with cheesecakes and other delicate items to keep the food moist. 

I love to cook.  I like to get into my kitchen, prep my mise en place, pour a glass of wine, put on some amazing music and cook food...glorious food.  I love to entertain and share my latest creation with my family and friends even if it's just at the dinner table with my little family every night.  Some things the kids want to try, some things they do not.  Zoodles are a big hit with Joe's son who loves his pasta.  I remember making my zucchini marinara recipe for a party I threw years ago and I made zoodles with my new spiralizer for it instead of just slicing the zucchini like I normally did.  My friend from Italy who ate the dish could not believe it was not pasta.  I hope he has since got himself a spiralizer and made it himself.  He's an amazing cook as well. 

My recipes are not secret...save for 2...the Family Stuffed Chicken and my dad's recipe for tomato sauce.  I find things in cookbooks, online, etc.  I sometimes follow to a 't' or mix it up based on what I have on hand or likes/dislikes on ingredients.  The goal here is to put good food at your reach to stay on track.  With flavor, exploration and the adventure of trying something new, keep your tastebuds guessing.  For me and I think for many, when the way of eating gets boring, we tend to lose our way.  We get complacent and fall back in to old habits. 

I'm on a personal mission to get this extra weight off and keep it off this time.  But I'm not going to deprive myself of food...glorious food with good taste and good for me.  Keto isn't all about the eggs, bacon and butter..although it can be for some, it just can't be for me.
