Meal Planning and Prepping

So in my first post I stressed the importance I have found in meal planning.  If I don't plan, I flounder.  I stuck to about 5 of the 7 meal planned days last week and was able to use leftovers as a buffer when I didn't feel like cooking so it all works out.  I consider that a win for meal planning.  I use up what's made keto in the fridge and I end up not having to toss a bunch of food that went bad.  $$$ saved...good job.  So when I get to set aside time to meal prep for the week, I feel even more accomplished.  I'm using the items I have on hand or bought for a specific purpose, again, avoiding the waste of things and staying on track.  But then, I head to the store for like 1 or 2 things, and I end up coming home with 1 or 2 bags of food.  Some things are staples to restock or last minute 'oh I forgot I needed that'.  But most items are extras or unplanned meal items I probably need to start being a bit more discerning about and pass...

And the scale moves again

Good morning all in Keto-landia.  How are we doing today?  Fantastic I hope.  The scale moved again for me today and in the loser direction.  It's a half a pound but it counts.  I'm trying to not obsess over the scale like a crazy woman.  Checking every day, getting frustrated with the slight fluctuations that occur normally in our bodies.  Especially for us ladies during 'that time of the month'.  So dinner last night was another success.  Chicken Cordon Bleu Casserole .  I made it exactly like the recipe and didn't combine the chicken and ham with the sauce this time.  I like it better the other way...so I'm going to be changing that up next time.  I'm a huge fan of French inspired cuisine.  I've got to figure out a keto recipe for Croque Monsieur that won't suck. (this recipe link-NOT KETO)  I threw another whole chicken in the crockpot last night after dinner with herbes de provence .  It smells divine....

Food...glorious food

Ok so I've faced and accepted it, I didn't put this weight on overnight, it's not going to come off overnight.  It's a process, it's a marathon not a sprint.  I just need to continue to make good choices every day, every meal, every moment.  And if I'm going to 'diet', I'm going to eat food full of flavor.  Breakfast prepared for this week...a knockoff of the Sous Vide bites from Starbucks.  I love those tasty bites from Starbucks but I found out that they have loads of rice starch in them.  I found this recipe on Pinterest for the Bacon Gruyere Egg bites .  I used the gruyere the week before in the Chicken Cordon Bleu Casserole I made so I used sharp white cheddar in these instead.  Now I've made egg muffin bites before but these were so much better.  The tricks...sour cream and baking them in a bain marie , a French cooking method meaning to use a water bath while baking.  We do this with cheesecakes and other delicate items to kee...

Let's begin this journey together...ok so a month or so late starting the blog but...

I am an emotionally eater.  I eat/drink when I'm happy, sad, bored, excited, celebrating, socializing, upset.  I add drink in there because I am a lover of wine and enjoy my wine and even on Keto, I choose not to give it up completely.  I'm just your average mom, girlfriend, career woman that like so many of us struggle with our weight.  I've even had weight loss surgery (Lap Band in 2009) and I still struggle.  I've done the low carb diet in the past, to be specific, I used to use the Somersize Program by Suzanne Somers.  And it worked for me then, I lost about 40# and then I reverted back to eating habits that did not maintain the weight loss. I had a friend tell me there were trying Keto and I knew it was a low carb way of eating like Paleo but I starting looking into it more and seeing what the plan was about to see if I could follow it with ease.  Like any new way of eating, preparing and prepping meals is ESSENTIAL these days with our busy sched...
